Bloomin' Baked Potatoes Are Easy To Make

I'm a big fan of the baked potato. It's a delicious vehicle for other delicious things. And I like how they smell when they come out of the oven. But if you have never tried a baked potato like this, then you have not lived. I'm sorry to have to tell you that. Don't worry! This is SO easy to make, you'll be making it tonight. Here is why if you have not been baking your potatoes like this, then you've been doing it wrong: they look pretty, which makes them fun to serve, they hold a lot more topping inside than a regular baked potato, and they get all toasty with the exposed bits in the oven. Seriously, next time you're having baked potatoes, bake them the Diply way. 

What you'll need:

- potatoes
- knife
- olive oil
- salt
- cheese
- bacon bits (optional...but not really)

The method:

Take your potatoes and slice off the "top". (Yes, I realize that a potato is more or less a sphere, so technically there is no top, but basically you're slicing off a side that will become the top.) Cut three rings into the top of the potato without going all the way through. Turn the potato over so that the flat "top" is now on the cutting board. Put your thumb on the middle of the potato. Now make slits all around the side, avoiding that middle part where your thumb is. Place this on a baking sheet and drizzle with olive oil. Then sprinkle it with salt. I wouldn't object if you wanted to get fancy and also cracked some pepper onto it right now too. Seriously. It doesn't call for it, but I wouldn't object. Bake at 425° for an hour. When it comes out of the oven it will have "bloomed." It's going to look pretty and smell all warm  and yummy. Sprinkle that hot and toasty potato with cheese. Put it back inside the oven for 5 more minutes. The cheese is going to melt into the little crevices that you made with your knife cuts. It's going to be glorious. If you decided to go the bacon crumble route, then this is when you can add that on top. My suggestion? Go crazy and add some chives and sour cream when you enjoy this. This is a million times better than a regular baked potato.
